This unit introduces core nutrition concepts, dietary assessment methods, and the clinical relevance of nutrition-related conditions such as obesity and cancer. Students will learn to interpret individual and population-level data to inform prevention, screening, and initial clinical decision-making, preparing them for applied clinical practice in subsequent units.
Learning Objectives
- Analyze the roles of macronutrients and micronutrients and apply federal dietary guidelines to interpret nutrient functions and recommended intakes in clinical scenarios
- Apply standardized dietary assessment methods (24-hour recall, food frequency questionnaire, food records) and basic anthropometric measures to evaluate an individual’s eating patterns and identify nutritional risks
- Demonstrate the ability to interpret epidemiologic and clinical data linking nutrition to health outcomes by summarizing trends in obesity and nutrition-related cancers and their clinical implications
- Evaluate global and community nutrition challenges (undernutrition, overnutrition) and recommend evidence-based prevention, screening, or referral strategies appropriate for clinical and public health contexts
